Ajvar is a delicious red pepper and eggplant spread that is popular in the Balkans. We'll show you how to make ajvar from scratch - it's super easy!
Red Bell Peppers Eggplant Olive Oil Garlic Cloves White Vinegar Granulated Sugar Salt & White Pepper Chili Flakes
Cut bell peppers in half and remove the seeds. Cut eggplant in half. Then place the veggies on a baking sheet lined with parchment paper.
Bake them in the oven at 400F for 30-40 minutes until the peppers and eggplant have charred skin. Place them in a colander to drain and cool.
Once cooled, peel the peppers and scoop out the flesh of the eggplant. Blend in a food processor or blender.
In a deep pan, heat oil and add the blended peppers and eggplant, minced garlic and chili flakes. Cook on low heat for 20-30 minutes, stirring regularly.
Add salt, sugar, white vinegar and black pepper, and cook for another 5 to 10 minutes. Finally stir in the rest of the olive oil
You can serve the ajvar as a spread on bread or as a dip for meat and veggies. It's often served with classic Balkan dishes such as cevapi or pljeskavica. Enjoy!
