Ingredients
Dressing
3tablespoonsolive oil, extra virgin
3tablespoonsred wine vinegar, alternatively apple cider vinegar
1tablespoonlemon juice
1-2teaspoonshoney, optional (see notes)
1teaspoonoregano, dried
1/4teaspoonsalt, more to taste
1/4teaspoonblack pepper
Salad
1English Cucumber, seeded and sliced
1cupcherry tomatoes, halved
1/2cupred onion, thinly sliced
1/2cupkalamata olives
1/2cupfeta cheese, cubed
1/4cupparsley, chopped; optional
Instructions
Add all ingredients for the dressing to a mason jar or any type of container with a lid. Cover and shake vigorously until combined. Adjust salt and pepper as needed.
Add cucumber, cherry tomatoes, red onion, olives, feta chese, and parsley to a salad bowl and drizzle with vinaigrette. Stir to combine, adjust salt if needed. Enjoy!
Notes
You can add one green bell pepper if you like the taste.
If preferred, you can also peel the cucumber.
Instead of cherry tomatoes, you can also use grape tomatoes or larger tomatoes and cut them into smaller pieces.
Instead of cutting the feta into cubes, you can also add the whole rectangle of feta cheese on top of the salad.
Traditionally, the olives still contain their pit. However, you can also buy pitted olives (recommended if kids are eating the salad).
If you don't like the hint of sweetness that the addition of honey provides (it's not a traditional ingredient), you can skip it. In that case, you may want to reduce the amount of vinegar you use.
The feta cheese and the olives you use might be quite salty already - if that's the case you may want to reduce the amount of extra salt you add.
