Greek Fries are a delicious way to change up your regular fries. Baked in spices like dill and oregano, these perfectly seasoned fries are topped with chopped red onion, parsley, and crumbly feta cheese!

4largeYukon Gold Potatoes
3tablespoonsolive oil
1teaspoonsalt
1/2teaspoonoregano
1/2teaspoondried dill
1/2teaspoonblack pepper
1/2teaspoongarlic powder
Toppings
1/2cupfresh parsley, finely chopped
1mediumred onion, finely chopped
1/4chupfeta cheese, crumbled
tzatziki, aioli or lemon wedges, optional
Instructions
Preheat the oven to 425 degrees Fahrenheit.
Wash the potatoes, leaving the skins on and cut them into 1/3-inch wide sticks. Make sure to keep each fry the same length as the potato.
Place the fries in a large bowl filled with cold water and soak them for 10 to 15 minutes. Drain and dry them thoroughly.
Add the fries into a large mixing bowl and toss them with olive oil, salt, dried oregano, dried dill, black pepper and garlic powder.
Line a baking sheet with parchment paper. Spread the potatoes out into an even layer.
Bake the fries for 15 minutes, then take them out of the oven and carefully flip them. Return the fries in the oven and bake for additional 6 to 8 minutes, or until they are crisp and golden brown.
Transfer the baked fries to a serving plate, sprinkle with finely chopped parsley, red onion and crumbled feta cheese.
Serve with tzatziki, aioli and/or lemon wedges. Greek fries are best served warm.
