This celery root soup - also known as celeriac soup - is warm, filling, and easy to make. It tastes great with homemade croutons and is perfect for the colder months!
Celery Root Butter Yellow Onion Vegetable Broth Russet Potatoes Salt Black Pepper Lemon Juice Whipping Cream
First, peel the celery roots with a vegetable peeler or knife and cut them into small cubes, about 1/2 inch large.
Next, peel and cut the potatoes into small cubes. Then peel and finely chop the onion as well.
Heat butter or oil in a large pot over medium heat, then add onions and sauté for about 3-4 minutes, or until soft. Stir regularly.
Now add the celery root and potato cubes and cook for three minutes. Stir regularly. Then add the vegetable broth and cover with a lid.
Bring to a boil, then lower heat and simmer for 20 minutes, or until the veggies are soft. Use an immersion blender to puree until smooth.
Next, season the soup with lemon juice, salt, and pepper to taste. Finally stir in the cream. You can adjust the salt and pepper as needed.
Serve the celery root soup warm with homemade croutons. Enjoy!
