Recipes from Europe

If you're looking for a dinner idea that is easy to make and perfect for summer, you'll have to try these chicken gyros. They are full of Mediterranean flavors and easy to make!

What You'll Need

Chicken Thighs  Pita Breads Olive Oil & Oregano Lemon Juice & Garlic Salt & Pepper Tomatoes & Cucumber Red Onion & Parsley Tzatziki

First, let's make the marinade. Whisk together oregano, olive oil, lemon juice, minced garlic, salt and pepper in a bowl or bag. Add chicken and toss.

Refrigerate the chicken for at least 30 minutes, up to 4 hours. Then heat oil in a pan and add the chicken to the pan, shaking off any excess marinade.

Cook the chicken for 6- 8 minutes per side, or until cooked through and lightly charred. The internal temperature should reach 165 degrees Fahrenheit.

Remove the cooked chicken from the pan and let it rest for a few minutes. Then cut it into small pieces. Also, cut up the veggies if you haven't yet.

Assemble the gyros by spreading tzatziki sauce on the pita bread. Then add some chicken, chopped tomatoes, cucumbers, red onions, and parsley.

Top with more tzatziki if you want, fold over, and serve immediately. These chicken gyros taste great with Greek fries or a Greek salad. Enjoy!
