German Cinnamon Star Cookies - known as Zimtsterne - are a classic holiday cookie. Shaped like a star and naturally gluten free, they are very popular and super easy to make.
Egg Whites Powdered Sugar Ground Almonds Cinnamon Vanilla Extract
First, separate the egg whites from the yolks. Then beat the egg whites in a mixing bowl with an electric mixer until stiff.
Sift in the powdered sugar and fold it in with a spatula. Then remove about 3 tablespoons for later use as glaze.
In the same bowl, add the ground almonds, cinnamon, and vanilla extract. Mix with a spatula, then knead the dough with your hands.
Form a dough ball and wrap it in cling flim. Refrigerate it for about 30 minutes.
Now, preheat the oven to 280 degrees Fahrenheit. Sprinkle powdered sugar onto your work surface and roll out the dough, about 1/4 inch thick.
Use a star cookie cutter to cut out the cookies. Gather the leftovers and roll the dough out again. Repeat until you've used up all the dough.
Carefully use a butter knife to spread some of the egg-sugar mixture on top of the starts. Place them on a baking sheet lined with parchment paper.
Bake the cookies at 280 degrees Fahrenheit for about 14-15 minutes. The tops should remain white. The cookies will harden as they cool.
Allow the cookies to cool, then enjoy! They will last for a few weeks in a cookie tin lined with parchment paper.
