If you're looking for a dish that's perfect for the hot summer days, this cold cucumber soup is for you. Originally from Bulgaria, it's easy to make and full of flavor!
English Cucumber Garlic Clove Thick Yogurt Walnuts Fresh Dill Water Olive Oil Salt & Pepper
Add the diced cucumber, minced garlic, chopped dill, and chopped walnuts to a bowl.
Next, add the yogurt and stir well. You can use either plain yogurt or Greek yogurt - it just has to be thick.
Now add the water (adjust the amount as needed), olive oil, salt and pepper and stir again. Taste and add more salt if needed. Refrigerate for at least 2 hours.
You can garnish the cucumber soup with a drizzle of olive oil, chopped dill and chopped walnuts before serving. Enjoy!
