Crema Catalana

How To Make

Recipes from Europe

If you're looking for a simple dessert with a fancy look, you have to try making crema catalana. Similar to crème brûlée, it has a creamy taste with a caramelized sugar top.

What You'll Need

Milk Egg Yolks Sugar Cinnamon Stick Lemon Peel Cornstarch

First, add a bit of milk and the cornstarch to a small bowl. Whisk until the cornstarch is dissolved. Then set the bowl aside.

In a pot, bring the rest of the milk, lemon peel, and cinnamon stick to a boil over medium-high heat. Once it starts boiling, turn off the heat and let it sit.

Separate the eggs and add the egg yolks and sugar to a mixing bowl. Beat with an electric hand or stand mixer until pale and fluffy.

Add the dissolved cornstarch mixture and whisk well. At this time, also remove the lemon peel and cinnamon stick from the milk.

Whisk the egg-sugar mixture into the milk in small increments.  Then cook over low heat until it thickens, stirring constantly.

Add the crema catalana to ramekins or small bowls and let it cool to room temperature. Then cover with plastic wrap and refrigerate for at least 2 hours.

When ready to serve, sprinkle sugar evenly on top of each bowl and use a kitchen torch to caramelize the sugar. (Or broil in the oven). Serve and enjoy!
