First, make the marinade. Whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper in a small bowl. Set it aside.
Cut the chicken breasts into 1 1/2 inch pieces and place them in a bowl. Add the marinade and mix well. Then refrigerate for at least 2 hours.
Soak wooden skewers in water for about 30 to 40 minutes. This is especially important if you plan on grilling the skewers.
Next, thread the chicken pieces onto the wooden skewers. There should be about 4 pieces on each skewer, but it can vary.
You can cook the chicken souvlaki in a cast iron pan, grill pan, or directly on the grill. If using a pan, make sure the skewers fit.
One option: Heat oil in a cast iron pan. Cook the chicken over medium heat for about 4 minutes on each side until fully cooked and browned.
Serve the cooked chicken souvlaki with pita bread, Greek salad, tzatziki sauce or other sides of your choice. Enjoy!
