First, make the marinade. Whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper in a small bowl. Set it aside.
Cut the chicken breasts into 1 1/2 inch pieces and place them in a bowl. Add the marinade and mix well. Then refrigerate for at least 2 hours.
Soak wooden skewers in water for about 30 to 40 minutes. This is especially important if you plan on grilling the skewers.
