Greek Chickpea Soup - known as Revithia soupa - is a flavorful and delicious soup. This easy version is made with canned chickpeas, carrots and celery for extra flavor.

What You'll Need

Chickpeas Vegetable Broth Carrots & Celery Red Onion Bay Leaves & Olive Oil Garlic Powder Lemon Juice Salt & Pepper Fresh Parsley

Heat olive oil in a large pot over medium heat, then add the chopped red onion. Cook for about 3 minutes, or until soft. Stir regularly.

Next, add the chopped celery and carrots (if using), garlic powder, oregano, and bay leaves and stir to combine.

Next, add the chickpeas and vegetable broth and bring the mixture to a boil. Reduce heat to low and simmer with a lid for 20-25 minutes.

When done simmering, stir in the lemon juice and season with salt and pepper (to taste).

Serve the soup in bowls and garnish with fresh parsley. Crusty bread works nicely on the side. Enjoy!
