This Greek Lemon Chicken Soup - known as Avgolemono Soup - is a flavorful and delicious chicken soup. Easy to make, it's perfect for the colder months.

What You'll Need

Olive Oil Green Onions Carrots & Celery Garlic & Bay Leaves Orzo or Rice Chicken Stock Chicken Breasts Eggs & Lemon Juice Salt & Pepper

Heat oil in a large pot. Add the chopped green onions, carrots, and celery. Sauté for about 3 minutes. Add the garlic and sauté for a couple more minutes.

Add the chicken breasts, chicken stock, and bay leaves to the pot. Then simmer for 15-25 min until the chicken is cooked.

Remove the chicken breasts and bay leaf. Add the orzo and cook for 15 more minutes. Meanwhile, shred the chicken and add it back to the pot.

In a small bowl, whisk together eggs and lemon juice. Take out 1-2 ladles of broth from the pot and slowly add it to the eggs to temper them.

Now add the egg mixture to the pot while whisking. Cook over low heat for about 5 minutes until slightly thickened.

Season the soup with salt and pepper to taste. You can garnish it with some chopped parsley. Serve warm and enjoy!
