If you're looking for a potato salad that is made without mayo and meat, you'll love this Greek potato salad. It's full of flavor and quite easy to make!

What You'll Need

Potatoes Red Onion Olives & Capers Parsley & Dill Oil & Wine Vinegar Lemon Juice Garlic & Oregano Salt & Pepper

First, boil the potatoes. Place them in a pot, add water and 1-2 teaspoons of salt and bring to a boil.

Meanwhile, make the dressing. Combine oil, red wine vinegar, lemon juice, minced garlic, oregano, pepper, and salt in a small bowl.

When the potatoes are cooked, remove them from the heat and let them cool. Then cut them into smaller pieces.

Add the potatoes together with the chopped red onion, kalamata olives, parsley, dill, and capers to a bowl.

Drizzle with the dressing and mix with two spoons. Be careful not to overmix as this can cause the potatoes to fall apart.

Let the potato salad sit for one hour to absorb the dressing before serving. Then serve and enjoy!
