Greek White Bean Soup - known as Fasolada - is a flavorful and delicious soup. This version is super easy to make and perfect for the colder months.

What You'll Need

Cannellini Beans Onion, Carrots & Celery Garlic Cloves Tomato Paste Olive Oil & Paprika Chili Flakes & Oregano Bay Leaves Vegetable Broth Salt and Pepper

Heat olive oil in a large pot over medium heat, then add the onion, carrots, celery, sliced garlic, and salt to taste. Saute for 5 minutes.

Next, stir in the tomato paste and cook everything for another 2 minutes.

Next, add the vegetable broth, oregano, paprika, chili flakes, bay leaves, and black pepper and give it a good stir.

Bring the soup to a boil, then lower the heat and add the beans. Cook on low heat for 10 to 15 minutes until the vegetables are soft.

Remove the bay leaves, stir in the remaining olive oil, and serve in bowls with parsley, feta, and kalamata olives on top. Enjoy!
