These Mushroom Stuffed Pancakes - generally known as Nalysnyky - are a popular dish in Ukraine and Russia. They are easy to make  and enjoyed savory with sour cream!

What You'll Need

All-Purpose Flour Eggs Milk Sugar Oil Mushrooms Onion Salt & Pepper Sour Cream

In a large bowl, whisk together half of the milk and the eggs, sugar, salt, and flour. Add the oil, whisk, then add the remaining milk. Let it stand for 10 minutes.

In a pan on medium-low heat, fry the onions for 4-5 minutes in a bit of oil, stirring regularly. Then add the chopped mushrooms and cook for another 8-10 minutes.

Season with salt and pepper, then transfer to a bowl and add in the sour cream. Stir until well combined.

Now make the thin pancakes in a greased frying pan over low heat. Cook for about 3 minutes per side or until lightly browned.

Transfer the cooked pancakes to a plate. Repeat until you've used up all of the batter.

To fill the pancakes, spoon 2 tablespoons of mushroom filling onto one half. Then fold or roll the pancakes anyway you like.

You can tuck in the edges if you like. Repeat for all the filling, then serve hot or cold with sour cream and fresh herbs. Enjoy!
