Olivier Salad is a classic creamy potato salad. Made with potatoes, eggs, carrots, peas, and sausage, versions of this Russian salad are popular in many countries.

Peel the boiled potatoes and cut them into small cubes, about a 1/4 inch thick. Then place them in a large mixing bowl.
Next, do the same with the sausage (e.g. bologna) or ham. Cut it into small cubes and place it in the mixing bowl.
Finely chop the cooked carrots and the pickles, and add them to the bowl with the other ingredients as well.
Drain the green peas and chop the boiled eggs. Then add both of these ingredients to the mixing bowl.
Now gently toss the salad to mix the ingredients and season with salt and pepper to taste.
You can add the mayo to the big salad bowl or add some salad to individual bowls, adding creamy mayo as desired by each eater!
Serve the salad cold. You can even leave it in the fridge for a few hours before serving if you want. Enjoy!
