If you're looking for an easy-to-make soup, try this sauerkraut soup. With pancetta bacon, potatoes, sour cream, and sauerkraut, it's great for the cold weather!

What You'll Need

First, peel and chop the onion into small pieces. Also peel and mince the garlic. Set aside.

Next, peel the potato (or wash it well if you want to leave the peel on). Then chop it into small cubes.

Next, drain the sauerkraut and remove any excess liquid by squeezing it out. Rinse the sauerkraut if it has a strong vinegar taste.

In a large pot, fry the pancetta bacon for about 5 minutes. If it's a whole piece, cut the bacon into small cubes before frying.

Now add the onions and sauté over medium heat for 5-6 minutes until translucent. Stir regularly to avoid burning.

Add the potato and garlic and fry for another 2-3 minutes as well. Then add the paprika powder and tomato paste and stir well.

Add the sauerkraut into the pot and mix well. Then add enough vegetable broth to just cover the contents in the pot.

Bring the soup to a boil, then simmer with the lid on for about 25-30 minutes, or until the potatoes are soft.

Remove the pot from heat and add the salt, pepper, and sour cream. Stir it all together one last time.

Serve the sauerkraut soup hot with slices of crusty bread. Enjoy!
