This Spanish Lentil Stew with Chorizo and Pork Ribs is comfort food at its best. Relatively easy to make, it's a dish that's perfect for the colder months.

What You'll Need

Brown Lentils Water Pork Ribs & Chorizo Carrots & White Onion Chard & Tomatoes Garlic & Bay Leaves Salt & Smoked Paprika Olive Oil

First, peel and dice the onion. Also cut the tomatoes in half and grate them. Smash the garlic cloves and slice the carrots.

Also wash and cut the chard leaves into smaller pieces and slice the chorizo.

Heat oil in a large pot, season the pork ribs and garlic cloves with salt and  fry them until golden on all sides. Then remove them from the pot.

To the same pot, add more oil and sauté the onions. Then add the grated tomatoes and cook for a few minutes.

Add the pork ribs, peeled garlic cloves, lentils, chorizo, carrots, paprika, salt, and bay leaves to the pot.

Cover with water and bring to a boil. Then lower the heat and simmer for about 45 minutes (with the lid on).

Now add the chard to the pot and cook for about 15 minutes until wilted. You can also use spinach or kale, but the cooking time may change.

Serve the lentil stew with chorizo and pork ribs hot. Enjoy!
