If you're looking for an easy almond cake, try this Tarta de Santiago recipe! A traditional cake from Galicia in northern Spain, it is very simple to make with few ingredients.

What You'll Need

Eggs Granulated Sugar Almond Flour Ground Cinnamon Lemon Zest Powdered Sugar

Start by preheating the oven to 350°F and lining a round cake pan with parchment paper. Then crack the eggs and weigh them (optional but recommended).

In a mixing bowl, beat the eggs and sugar with an electric hand or stand mixer for about 5-7 minutes until they are pale and fluffy.

When the eggs are pale, set the mixer aside. Add the almond flour, cinnamon, and lemon zest and mix them in using a whisk.

Pour the batter into the pan lined with parchment paper and spread it out evenly with a spatula.

Bake the cake at 350°F for 30 to 35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.

Let the cake cool, then remove it from the pan and place a paper stencil of Santiago’s cross on top and dust with powdered sugar. Then serve and enjoy!
