If you're looking for a salad that is easy to make and perfect for summer, you'll love this Greek orzo salad. It's full of delicious Mediterranean flavors!

What You'll Need

Orzo Pasta & Feta Cucumber & Tomato Red Onion & Olives Parsley & Basil Olive Oil & Vinegar  Dijon Mustard  Oregano Salt & Pepper

First, cook the orzo pasta according to package directions. Don't overcook it, since this can change the taste and texture of the salad.

Once it's cooked, drain it and place it in a large bowl. Let it cool for a few minutes.

Now add the chopped cucumber, diced red onion, cherry tomatoes, crumbled feta cheese, chopped basil and parsley, and olives. Stir well.

Next, make the dressing. Combine olive oil, red wine vinegar, dijon mustard, dried oregano, salt and black pepper in a small bowl.

Pour the dressing over the salad and mix well. If you have time, let the salad chill in the fridge for about an hour.

Serve the orzo salad with sides of choice. It tastes great with chicken souvlaki, salmon or vegetarian dishes like zucchini fritters. Enjoy!
