What You'll Need

Zucchini & Scallions Dill & Parsley Eggs & Flour Breadcrumbs Baking Powder Feta Cheese Salt & Pepper Oil for frying

Shred the zucchini. Then place them in a colander over a bowl and sprinkle with salt. Let them sit for about 30 minutes to draw out moisture.

Squeeze out as much liquid as you can. For this you can either use a spoon or use your clean hands.

Then add the shredded zucchini to a large mixing bowl. Also add the chopped scallions/green onions, parsley, dill and eggs. Mix well.

Next, add the flour, baking powder, breadcrumbs, salt, and black pepper. Mix again until well combined.

Finally stir in the crumbled feta cheese.

Heat oil in a skillet. Then add dollops of the mixture and flatten with a spatula. Cook over medium-high heat for 2-3 minutes per side until cooked and golden brown.

Repeat until you've fried all the zucchini fritters. Then serve them with tzatziki sauce or plain Greek yogurt. Enjoy!
