Spanakopita is a delicious Greek Spinach pie that comes in different shapes and is very popular. It's actually quite easy to make at home. Here's how!
Olive Oil Onion & Garlic Frozen Spinach Salt & Pepper Feta Cheese Parsley Eggs Phyllo Sheets
First, heat oil in a large pan. Add the chopped onion and minced garlic. Sauté for a few minutes until translucent.
Add the frozen spinach and cook, stirring regularly, until the liquid has evaporated. Season with salt and pepper and set aside to cool.
Once cooled, add the parsley and crumbled feta to the pan. Then also stir in the eggs.
Grease a baking dish, then place one sheet of phyllo dough in it and brush with olive oil. Place another sheet on top and brush with more oil.
Repeat until you've placed down 8 sheets, then add the spinach feta mixture and spread it out evenly.
Place the remaining phyllo sheets on top, brushing each one with oil. Then press down the edges and trim if necessary.
Brush the top with more oil and sprinkle with sesame seeds (optional). Then bake at 350 degrees F for about 1 hour or until golden brown.
Remove the spanakopita from the oven and let it sit for a few minutes. Then cut it into squares or triangles and serve. Enjoy!
