This easy radish salad, known as Radieschensalat in German, is made with thinly sliced radishes, onions, and a very simple dressing. It’s fresh and flavorful and comes together in just a few minutes.
Growing up in Germany, I often ate radishes with my dad… sometimes whole with a bit of salt while watching soccer, and other times as a salad as part of a traditional Brotzeit.
This salad tastes delicious with a slice of fresh bread and butter, as part of a Brotzeit spread, or as a simple side to hearty meals.
Ingredients
- Radishes – Use firm radishes for the best taste.
- Yellow onion – For a milder taste, you can also use a sweet onion or green onions.
- Oil – A neutral-tasting oil. We use avocado oil, but sunflower oil, canola oil, or vegetable oil also work. I wouldn’t recommend extra virgin olive oil for this recipe.
- White wine vinegar – Alternatively, you can use some lemon juice.
- Sour cream – We use full-fat sour cream.
- Salt – Enhances the overall flavor and draws out moisture from the radishes. Adjust to taste.
- Sugar – A little bit of granulated sugar balances the taste.
- Black pepper – We use freshly cracked pepper for the best taste.
- Chives – For garnish. Alternatively, fresh parsley also works.
Recipe Tips
- Slice the radishes thinly and evenly for the best texture. We use thickness 2 out of 3 on our mandolin slicer.
- Use about 1/4 of a small onion for a balanced flavor, or up to 1/2 of a small onion if you’re an onion lover.
- You can skip the sour cream if you prefer. In that case, shake the dressing well (a small jar with a lid works well) to help it emulsify. You can also add a little bit of Dijon mustard to help bind it.
- Adjust the salt, sugar, vinegar, and sour cream as needed. Radishes can vary quite a bit in sharpness.
- Let the salad rest before serving. The salt draws out some moisture from the radishes and creates more dressing. The radishes will also soften slightly.
How to Make Radish Salad – Step by Step Instructions
First trim the radishes, then wash and dry them. Slice them thinly using a mandolin or a sharp knife, and place them in a mixing bowl.
Peel and finely dice the onion, then add it to the bowl with the radishes.
In a small bowl, whisk together the oil, vinegar, sour cream, salt, sugar, and black pepper. Then pour the dressing over the radishes and toss until evenly coated.
Let the salad sit for at least 15 minutes, then adjust the seasoning if needed and serve. You can garnish the salad with fresh chopped chives if you like. Enjoy!
Storage Tips
In the unlikely case that you have leftovers, store them in a sealed container in the fridge overnight. Eat the leftovers the next day.
